Back extrusion technique was employed to evaluated texture properties of partial substituted whey protein concentrate (WPC) with milk solids not fat (1, 2, 3 and 4%) in ice cream formula. There was no remarkable effect of adding WPC on total solids or fat %. Total protein increased, while ash, and lactose content were significantly decreased. Back-extrusion results represented a decrease in hardness values of resultant ice cream, while, during storage, there was a slight increase. Energy input values decreased by increasing substitution levels of WP. Although, energy output inversely correlated with substitution levels of WP it correlated with storage period indicating a strong structure for stored ice cream. Load at target deformation (50%) applied to the samples when fresh and after 14 days storage showing decreased values proportional to increasing substitution levels of WP. The resilience showed decreased ratio indicating more visco-elastic properties in fresh ice cream. The recovered height and deformation increased with increasing substitution levels of WP and storage period. Therefore, more sticking properties were obtained in resultant ice cream. Adhesive force decreased significantly with increasing substitution levels of WP and storage period. Adhesiveness values were significantly higher in all treatments than control. The texture of the ice cream became smoother by replacing milk solid not fat with WPC up to 3%. From the data obtained, it could be recommended that ice cream can be produced with high quality by substituting milk solid not fat with WPC up to 3%.

Detection of Kids milk Quality using Methylene Blue Reduction test

Back ground and Objectives: Milk is a highly nutritious food that serves as an excellent growth medium for a wide range of microorganisms. Rapid, simple and inexpensive microbiological quality determination methods including Methylene Blue Reduction (MBRT) test could be commonly used as a quick method to assess the microbiological quality of raw and pasteurized milk. The aim of study is to determine quality of kids milk using Methylene Blue Dye Reduction Test Methods: A total of 37 samples comprising of kids milk collected at different levels of collection and processed. Accordingly 12 different milk samples from hypermarket, 8 different milk samples from unlicensed hawker (retail market), 11 different samples with additives from hyper market samples and 6 different samples with high price. Samples were collected. One ml of the Methylene Blue Thiocyanate solution added into a test tube then 10 ml of milk poured into test tube. Tubes incubated at 37 oC Results: Results showed that all types of milk that purchased from super market, local market and high price milk types shown no change of methylene Blue color appear on the base of time, that indicate very good quality of the milk. On the base of milk types with additive materials only one milk showed change in colour but after confirm test the colour remained blue and not changed. Conclusion: Methylene blue reduction test is rapid economic method that can be used for detection of milk quality. Approximately all the kids of milks that is purchased in our market and local markets showed sterility and the source contamination if take place may be by storage condition and transvers vehicle.

Causes and Measures for Controlling Loan Default among Agricultural Cooperatives in Bune State, Nigeria

The studies analyzed the causes and measures for controlling loan default among agricultural co-operatives in Benue State of Nigeria. Data were collected from 130 respondents using structured questionnaire, and was analyzed using descriptive statistics. The result shows that factors responsible for loan default were classified into Institutional, Client-related, Geo-economical, and Market related factors. Late disbursement of (92.31%), lack of loan monitoring (76.92%), inadequate loan appraisals (69.23%), and lack of clear cut policy on lending (69.23) were the institutional factors responsible for loan default. Lack of integrity (80.77%), poor business practice (78.46%), and loan diversion (50.0%) were client-related factors. Death of client (70.77%), economic downturn (55.38%), and natural calamity (52.31%) were geo-economic factors, while, lack of market information (81.54%), market location (49.23%) and wrong economic decision (40.77) were market related factors. The result also showed that obtaining information on borrowers' integrity (92.23%), and training of borrowers on the terms and conditions (82.54%) were main measures to control loan default in the study area. Information on client integrity, and training of borrowers on terms and condition of loan before loan are granted were found to be best measures to control loan default. It was recommended that sound and flexible lending policies measures which must be reviewed frequently by the Central Bank of Nigeria (CBN) and Bank for Agriculture and Agricultural Co-operatives (BAAC) be put in place in order to curtail bureaucracies involved in the management approvals and disbursement of agricultural loan should be formulated. This will ensure early disbursement of funds to co-operative members.
